Sweet Potato & Kidney Bean Fritters
In a large bowl, combine mashed sweet potato and mashed kidney beans.
Ingredients
- 1 piece sweet potato, cooked and mashed
- 200 g canned kidney beans, drained and mashed
- 0.25 cup all-purpose flour
- 2 tbsp green onion, chopped
- 1 tsp smoked paprika
- 1 tbsp olive oil
Steps
- In a large bowl, combine mashed sweet potato and mashed kidney beans.
- Add flour, chopped green onion, smoked paprika, and olive oil. Mix well until a cohesive mixture forms.
- Form the mixture into 8-10 small fritters.
- Preheat air fryer to 190°C. Arrange fritters in a single layer in the air fryer basket.
- Air fry for 18-20 minutes, flipping halfway, until golden brown and slightly crisp.
