Stuffed peppers
Halve bell peppers lengthwise and remove seeds. Precook rice if using raw rice; mix with cooked mince (or beans), tomato sauce, onion, garlic, herbs and seasoni
Ingredients
- 4 piece bell peppers (any colour)
- 1 cup cooked rice
- 200 g minced meat or black beans (cooked)
- 0.5 cup tomato sauce
- 0.5 piece onion, finely chopped
- 2 tbsp olive oil
- 1 clove garlic
- 0.5 tsp dried herbs (oregano or basil)
Steps
- Halve bell peppers lengthwise and remove seeds. Precook rice if using raw rice; mix with cooked mince (or beans), tomato sauce, onion, garlic, herbs and seasoning.
- Fill each pepper half with the mixture. Drizzle with olive oil. Place in air fryer basket, cut side up.
- Air fry at 180°C for 18–22 minutes until peppers are tender and filling is hot. Serve with cheese or fresh herbs.
