Spiced Chickpea & Spinach Air Fryer Patties
In a large bowl, combine mashed chickpeas and finely chopped fresh spinach. Squeeze out any excess water from the spinach.
Ingredients
- 400 g canned chickpeas, drained and mashed
- 100 g fresh spinach, finely chopped
- 0.25 cup oat flour (or regular flour)
- 0.5 tsp ground coriander
- 0.5 tsp ground cumin
- 0.25 tsp cayenne pepper (optional)
- 1 tbsp lemon juice
Steps
- In a large bowl, combine mashed chickpeas and finely chopped fresh spinach. Squeeze out any excess water from the spinach.
- Add oat flour, ground coriander, ground cumin, cayenne pepper (if using), and lemon juice. Mix thoroughly until well combined and a firm dough forms.
- Form the mixture into 8-10 small patties.
- Preheat air fryer to 180°C. Place patties in the air fryer basket in a single layer, ensuring not to overcrowd.
- Air fry for 15-17 minutes, flipping halfway, until golden brown and cooked through.
