Smoky White Bean & Tofu Skewers
In a bowl, combine tofu cubes, cannellini beans, bell pepper chunks, and red onion chunks.
Ingredients
- 300 g extra-firm tofu, pressed and cubed
- 200 g canned cannellini beans, drained
- 1 piece bell pepper (any color), cut into chunks
- 0.5 piece red onion, cut into chunks
- 2 tbsp soy sauce
- 1 tsp smoked paprika
- 1 tbsp olive oil
Steps
- In a bowl, combine tofu cubes, cannellini beans, bell pepper chunks, and red onion chunks.
- In a separate small bowl, whisk together soy sauce, smoked paprika, and olive oil to create a marinade.
- Pour the marinade over the tofu and vegetables, tossing gently to coat. Let marinate for at least 10 minutes.
- Thread the marinated tofu, beans, and vegetables onto skewers.
- Preheat air fryer to 195°C. Place skewers in the air fryer basket and air fry for 15-18 minutes, turning occasionally, until vegetables are tender-crisp and tofu is golden.
