  1. Brush eggplant slices with olive oil and season with salt. Arrange in air fryer basket in a single layer (work in batches if needed).
  2. Air fry at 200°C for 10–12 minutes until golden and tender, flipping halfway.
  3. Layer cooked eggplant in a small ovenproof dish (or use air fryer basket): add marinara, mozzarella, Parmesan and basil. Repeat layers. Air fry at 180°C for 6–8 minutes until cheese is melted and bubbling.
  4. Rest 2 min, then serve with extra basil.
