Eggplant parmesan
Brush eggplant slices with olive oil and season with salt. Arrange in air fryer basket in a single layer (work in batches if needed).
Ingredients
- 1 piece eggplant, sliced into 1 cm rounds
- 2 tbsp olive oil
- 0.5 cup marinara sauce
- 80 g mozzarella, shredded
- 2 tbsp Parmesan
- 0.5 tsp dried basil
- 0.25 tsp salt
Steps
- Brush eggplant slices with olive oil and season with salt. Arrange in air fryer basket in a single layer (work in batches if needed).
- Air fry at 200°C for 10–12 minutes until golden and tender, flipping halfway.
- Layer cooked eggplant in a small ovenproof dish (or use air fryer basket): add marinara, mozzarella, Parmesan and basil. Repeat layers. Air fry at 180°C for 6–8 minutes until cheese is melted and bubbling.
- Rest 2 min, then serve with extra basil.
