Air Fryer Dijon Mustard Pork Medallions
Pat pork medallions dry. In a bowl, whisk together Dijon mustard, honey, olive oil, garlic powder, dried thyme, salt, and pepper.
Ingredients
- 450 g pork tenderloin, sliced into 2 cm medallions
- 2 tbsp Dijon mustard
- 1 tbsp honey
- 1 tbsp olive oil
- 0.5 tsp garlic powder
- 0.5 tsp dried thyme
- 0.5 tsp salt
- 0.25 tsp black pepper
Steps
- Pat pork medallions dry. In a bowl, whisk together Dijon mustard, honey, olive oil, garlic powder, dried thyme, salt, and pepper.
- Add pork medallions to the bowl and toss to coat evenly. Marinate for at least 15 minutes.
- Preheat your air fryer to 180°C (350°F) for 3 minutes.
- Arrange the marinated pork medallions in a single layer in the air fryer basket, ensuring they are not overcrowded.
- Cook for 12-15 minutes, flipping halfway, until the pork is cooked through and lightly browned. An internal temperature of 63°C (145°F) is ideal.
