- 700 g pork belly, skin on, scored
- 1 tsp salt
- 0.5 tsp five-spice powder
- 0.5 tsp baking soda (optional, for crispier skin)
Steps
- Pat the pork belly very dry. Score the skin deeply but not through the meat. Rub salt and baking soda (if using) into the skin. Rub five-spice powder on the meat side.
- Preheat your air fryer to 160°C (325°F). Place the pork belly skin-side up in the air fryer basket.
- Cook for 30 minutes at 160°C (325°F). This renders the fat.
- Increase the air fryer temperature to 200°C (390°F). Cook for another 15-20 minutes, or until the skin is puffed and very crispy. Watch carefully to prevent burning.
- Remove from air fryer, let rest for 5 minutes, then cut into cubes and serve.
