Coconut shrimp
Coat shrimp in flour, egg, then mix of panko and coconut. Season with salt.
Ingredients
- 400 g large shrimp, peeled and deveined
- 2 tbsp plain flour
- 1 piece egg, beaten
- 50 g panko breadcrumbs
- 30 g desiccated coconut
- 0.5 tsp salt
Steps
- Coat shrimp in flour, egg, then mix of panko and coconut. Season with salt.
- Arrange in air fryer. Spray with oil. Cook at 200°C for 6–8 min, flipping once.
- Serve with sweet chilli or mango dip.
