- 2 cup cooked arborio rice (cooled)
- 1 piece egg, beaten
- 50 g mozzarella, cubed
- 30 g Parmesan, grated
- 3 tbsp breadcrumbs
- 1 tbsp olive oil
- 0.5 tsp salt
- 1 portion marinara sauce to serve
Steps
- Mix cooled rice with egg, 2 tbsp breadcrumbs, Parmesan and salt. Take a portion, press a mozzarella cube in the centre and form into a ball. Roll in remaining breadcrumbs. Repeat for all balls.
- Brush balls with oil and place in air fryer basket in one layer. Cook at 200°C for 10–12 minutes until golden and crisp.
- Serve hot with marinara sauce.
