Air Fryer Roasted Tempeh & Root Vegetables
In a large bowl, combine the cubed tempeh, sweet potatoes, and carrots.
Ingredients
- 250 g tempeh, cubed
- 2 piece sweet potatoes, peeled and cubed
- 2 piece carrots, peeled and sliced
- 2 tbsp olive oil
- 1 tsp dried thyme
- 0.5 tsp garlic powder
- to taste piece salt and black pepper
Steps
- In a large bowl, combine the cubed tempeh, sweet potatoes, and carrots.
- Drizzle with olive oil, then sprinkle with dried thyme, garlic powder, salt, and black pepper. Toss well to coat all ingredients evenly.
- Preheat air fryer to 190°C. Place the seasoned tempeh and vegetables in the air fryer basket in a single layer (you may need to do this in batches).
- Cook for 20-25 minutes, shaking the basket every 7-8 minutes, until the vegetables are tender and slightly caramelized, and the tempeh is golden brown.
