Air Fryer Quinoa & Veggie Stuffed Bell Peppers
Halve the bell peppers lengthwise and remove seeds. Lightly brush with olive oil.
Ingredients
- 2 piece bell peppers, halved
- 150 g cooked quinoa
- 100 g canned black beans, rinsed
- 50 g corn kernels
- 50 g diced tomatoes
- 60 g shredded cheddar cheese
- 0.5 tsp cumin
- 0.5 tsp chili powder
Steps
- Halve the bell peppers lengthwise and remove seeds. Lightly brush with olive oil.
- In a bowl, combine cooked quinoa, black beans, corn, diced tomatoes, half of the cheddar cheese, cumin, and chili powder.
- Spoon the mixture evenly into the bell pepper halves.
- Preheat your air fryer to 190°C (375°F) for 5 minutes.
- Place the stuffed peppers in the air fryer basket. Cook for 15 minutes, then sprinkle with the remaining cheese and cook for another 5 minutes, or until peppers are tender and cheese is melted and bubbly.
