- 2 piece medium sweet potatoes, diced
- 0.5 piece onion, diced
- 0.5 piece bell pepper (any color), diced
- 1.5 tbsp olive oil
- 1 tsp dried rosemary
- 0.5 tsp smoked paprika
- 0.5 tsp salt
- 0.25 tsp black pepper
Steps
- In a large bowl, combine diced sweet potatoes, onion, bell pepper, olive oil, dried rosemary, smoked paprika, salt, and black pepper. Toss until all vegetables are evenly coated.
- Preheat your air fryer to 190°C (375°F) for 5 minutes.
- Transfer the seasoned vegetables to the air fryer basket in an even layer. You may need to cook in batches depending on your air fryer size.
- Cook for 20-25 minutes, shaking the basket every 7-8 minutes, until the sweet potatoes are tender and slightly caramelized.
